{"id":2957,"date":"2019-12-09T08:21:32","date_gmt":"2019-12-09T08:21:32","guid":{"rendered":"http:\/\/smaf-ltd.com\/wordpress\/?p=2957"},"modified":"2024-12-21T21:37:12","modified_gmt":"2024-12-21T21:37:12","slug":"chocolate-figs-the-tradition-to-donate-them","status":"publish","type":"post","link":"https:\/\/www.smaf-ltd.com\/wordpress\/chocolate-figs-the-tradition-to-donate-them\/","title":{"rendered":"Chocolate Figs, the tradition to donate them"},"content":{"rendered":"\n<p>9.12.2019<\/p>\n\n\n\n<p><em>Dried figs<\/em>\nfilled with chocolate in Calabria are donated to relatives and friends, or\nhowever tasted during the Christmas holidays, because they can be kept for\nmonths, if stored in tin boxes and covered &#8211; once dried &#8211; with sheets of baking\npaper.<\/p>\n\n\n\n<p>Dried figs filled with chocolate are\na must of the Calabrian Christmas gastronomy, a gift of Mediterranean\ncivilization to South of Italy, to Italy and to the world (they are very\nappreciated in London, for example).<\/p>\n\n\n\n<p>It is a healthy and delicious sweet\nto eat in just one mouthful. They can be covered either with dark chocolate or\nwith white chocolate, depending on personal taste. For the filling it can be\nused both almonds and walnut kernels.<\/p>\n\n\n\n<p>The traditional preparation period\nfor this typical Calabrese dessert is September, a period of abundant figs. Hence the name <em>crocette<\/em>, that is the cross-shaped name\nthey take after the filling and pressing. Figs are dried in the sun on special\nreeds.<\/p>\n\n\n\n<p>A selection therefore takes place\nbecause the figs destined for the preparation must all be of the same size.\nAfter the selection the figs are stuffed according to tradition with a\npreparation of sugar and cinnamon, with the addition of walnuts or almonds and\norange and lemon peel. They are then pressed manually so that the two open\nparts of the fig are perfectly matched.<\/p>\n\n\n\n<p>Once the figs are stuffed they are\nbaked and cooked at 200 \u00b0C, then the product is sterilized. Immediately after\ncooking, they are cooled in special rooms and then packaged. The dried fig\ncrosses are packaged with three different preparations: <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>the\nfirst involves the use of almonds for the filling of figs, <\/li><li>the\nsecond the use of walnuts and <\/li><li>the\nthird instead involves covering the product with dark chocolate.<\/li><\/ul>\n\n\n\n<p><strong>SPECIAL RECIPES<\/strong><\/p>\n\n\n\n<p><strong>Skewers of dried figs (&#8220;schiocche&#8221;)<\/strong><\/p>\n\n\n\n<p>The <em>Schiocche<\/em> are skewers and are made from dried figs baked in the oven, then skewered on two sticks alternating the fruits on the right and left so as to make a sort of pigtail.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"615\" height=\"370\" src=\"http:\/\/smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-corollas.jpg\" alt=\"\" class=\"wp-image-2962\" srcset=\"https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-corollas.jpg 615w, https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-corollas-300x180.jpg 300w\" sizes=\"auto, (max-width: 615px) 100vw, 615px\" \/><figcaption><strong>&#8220;Schiocche&#8221; as collars of Figs<\/strong><\/figcaption><\/figure>\n\n\n\n<p><strong>Figs stuffed with Walnuts<\/strong><\/p>\n\n\n\n<p>They are dried figs stuffed with walnut cooked in the oven, then skewered in sticks alternating the fruits on the right and left. This combination of dried figs and walnuts is excellent in terms of nutrition. In the Calabrian\ntradition we find the crosses, prepared with four figs. The fruit is opened in\nhalf leaving the part of the petiole joined, it is usually filled with walnuts,\ncarnation, cinnamon and citrus peel, orange or lemon. Open figs are placed in a\ncross shape, two below and two above.<\/p>\n\n\n\n<p><strong>Stuffed Figs: Almond <em>Crocette<\/em><\/strong><\/p>\n\n\n\n<p>The fruit is opened in half leaving\nthe part of the petiole joined, it is usually filled with almonds, carnation,\ncinnamon and citrus peel, orange or lemon. Open figs are placed in a cross\nshape, two below and two above Figs, even if you think they have many calories,\nit is a fruit that can be consumed by adults and children, it has no dyes or\npreservatives, it has digestive properties. The Calabrian crosses can be\nconsumed instead of a snack.<\/p>\n\n\n\n<p><strong>Stuffed Dried figs, covered with Chocolate<\/strong><\/p>\n\n\n\n<p>The chocolate-covered figs are real\npleasures of gluttony. Serve as a dessert, they cannot be missing from the\nCalabrian table where figs are an ancient and traditional food. Figs can be\nprocessed in many different ways.<\/p>\n\n\n\n<p>The figs are first cut in half and\nthen filled with a filling:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>of\nhazelnuts,<\/li><li>cocoa,<\/li><li>aromas\nincluding carnation, cinnamon and citrus fruit peel.<\/li><\/ul>\n\n\n\n<p>Everything is mixed with the cooked wine which gives it a unique and particular taste. In addition to the excellent supply of energy and\nnutrients, thanks to the omega 3 contained in the almonds, the intake of this\nfood product contributes to reducing the bad LDL cholesterol and also thanks to\nthe fiber content there is a mile control of blood sugar levels.<\/p>\n\n\n\n<p><strong>HISTORY<\/strong><\/p>\n\n\n\n<p>&#8220;<em>Li Ficu siccati<\/em>&#8221; (the dried figs) are one of the most famous\nsweets in Calabria.<\/p>\n\n\n\n<p>Introduced at the time of <strong>Magna Graecia<\/strong>, fig cultivation has been documented in the province of <strong>Cosenza<\/strong> since the 1500s. The Figs of Cosenza Dop are a fascinating and historically significant production in Calabria. The denomination &#8220;<em>Fichi di Cosenza<\/em>&#8220;, as stated in the production disciplinary, refers exclusively to the dried fruits of domestic fig &#8220;<em>Ficus carica sativa<\/em>&#8221; (<em>domestic L<\/em>.), belonging to the &#8220;<em>Dottato<\/em>&#8221; variety. In the Cosentino area, and especially in the Valle del Crati, the <em>Dottati<\/em> varieties have found an ideal habitat, in a moderately ventilated hilly environment, not arid but not too rainy.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Fico-di-Cosenza.jpg\" alt=\"\" class=\"wp-image-2968\" width=\"666\" height=\"376\" srcset=\"https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Fico-di-Cosenza.jpg 480w, https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Fico-di-Cosenza-300x169.jpg 300w\" sizes=\"auto, (max-width: 666px) 100vw, 666px\" \/><figcaption><strong>&#8220;<em>Fico di Cosenza<\/em>&#8221; (<em>Ficus carica sativa<\/em> )<\/strong><\/figcaption><\/figure>\n\n\n\n<p>For the rest, the great\nMediterranean culture and civilization has given to Calabria and the world an\nancient plant: the fig has evidence of its cultivation dating back to the first\nagricultural civilizations of Mesopotamia, Palestine and Egypt, from which it\nsubsequently spread throughout the basin of the Mediterranean Sea.<\/p>\n\n\n\n<p>If by definition it is called &#8220;<em>Fico Mediterraneo<\/em>&#8220;, it is also\nconsidered historically a native and common of the <em>Caucasian <\/em>regions, and of the <em>Black\nSea<\/em>. In Italy the Fico existed before the foundation of <strong>Rome<\/strong> (it is in the shadow of this plant\nthat Romulus would have been suckled and Oar).<\/p>\n\n\n\n<p>Despite its ancient and noble\norigins, fig is now considered a &#8220;minor fruit&#8221;, as it is classified\nin modern fruit-growing treaties. After having played a leading role, today it\nhas remained more tied to the memory than to the reality of Mediterranean\nagricultural productions such as the olive tree and the vine.<\/p>\n\n\n\n<p>The fig tree arrived in Calabria in\nan uncertain period, probably at the time of the Greco-Roman civilization by\nthe <strong>Phoenician<\/strong> travelers who used it\nas barter goods or who, in the dry version, used it as a reserve of calories\nfor the labors of the crew. From then on its cultivation quickly took hold,\nparticularly in the province of Cosenza, thanks to an ideal pedoclimatic\nsituation.<\/p>\n\n\n\n<p><strong>FICO DI COSENZA, PROTECTED BY THE QUALITY MARK &#8220;DOP&#8221; <\/strong><\/p>\n\n\n\n<p>The peculiarities of the &#8220;<em>fico di Cosenza<\/em>&#8221; have been\nrecognized in 2010 with the quality label &#8220;DOP&#8221; (In Italian:\n&#8220;Denomination of Protected Origin&#8221;). The typicality is related to the\nValle del Crati (CS), where a hilly environment with a temperate climate has\ncreated the right conditions for optimal vegetation.<\/p>\n\n\n\n<p>The <em>Fichi di Cosenza<\/em> PDO are of an elongated drop shape, sometimes\nslightly flattened at the apex. The peduncle is always present, short and thin.\nThey are fruits with a very sweet taste of small size, with elastic skin, soft\npulp and very small seeds. They are marketed after being dried in the sun on\n&#8220;<em>cannizzi<\/em>&#8221; (reeds) or\nwooden boards or even in the oven. With the typical golden color, dried figs\nhave a higher yield than other varieties and are full, fleshy, mellow, soft,\nplastic, very white, highly sugary and easy to preserve.<\/p>\n\n\n\n<p>The production, processing and packaging area of Fichi di Cosenza PDO includes several municipalities considered in their entirety or only in part of the province of Cosenza, located between the mountainous area of <em>Pollino<\/em> and the <em>Sila Plateau<\/em>, in the Calabria region.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"661\" src=\"http:\/\/smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-almond-crosses-1024x661.jpg\" alt=\"\" class=\"wp-image-2969\" srcset=\"https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-almond-crosses-1024x661.jpg 1024w, https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-almond-crosses-300x194.jpg 300w, https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-almond-crosses-768x495.jpg 768w, https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-almond-crosses-1536x991.jpg 1536w, https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-almond-crosses-640x413.jpg 640w, https:\/\/www.smaf-ltd.com\/wordpress\/wp-content\/uploads\/2019\/12\/Figs-almond-crosses.jpg 1981w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><figcaption><strong> Crosses of Figs stuffed with Almond <\/strong><\/figcaption><\/figure>\n\n\n\n<p>Drying and processing of dried figs\nin Cosenza is a tradition, handed down from father to son in the south: the\nheat is used to eliminate the humidity inside the fruit and to obtain a product\nthat can be conserved for the rest of the year.<\/p>\n\n\n\n<p>Traditional fig dishes are present\nin <em>festivals <\/em>and <em>fairs<\/em> in the province. In particular that of <strong>St. Joseph<\/strong>, which is celebrated in Cosenza at least from the\nmid-nineteenth century.<\/p>\n\n\n\n<p>In the kitchen, at the beginning or\nend of the meal, the Fico di Cosenza PDO is the protagonist of many traditional\nproductions: <em>montagnoli, crocette,\nnocchette<\/em>, <em>stuffed figs, baked figs,\nballs, braids, corollas, salami and fig honey<\/em>. These figs are an\nindispensable ingredient for preparing a <em>classic\ndessert<\/em> for the holidays, the &#8220;<strong>pitta\n&#8216;mpigliata<\/strong>&#8221; or &#8220;<strong>pitta&#8217;\nnchiusa<\/strong>&#8220;.<\/p>\n\n\n\n<p><strong>PROPERTIES OF FIGS<\/strong><\/p>\n\n\n\n<p>The benefits of figs are many:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Excellent\nfor reducing symptoms of fatigue because it is a highly energetic and complete\nfood with all the nutrients<\/li><li>Rich\nin mineral salts and Vitamin C and A<\/li><li>Easily\ndigestible<\/li><li>Thanks\nto the presence of the fibers they help the normal intestinal functions.<\/li><\/ul>\n","protected":false},"excerpt":{"rendered":"<p>9.12.2019 Dried figs filled with chocolate in Calabria are donated to relatives and friends, or however tasted during the Christmas holidays, because they can be kept for months, if stored in tin boxes and covered &#8211; once dried &#8211; with sheets of baking paper.
